Lyophilization, or freeze-drying, is a process that’s as simple as it is ingenious. It involves removing all the water from a dish through sublimation: the meal is frozen at very low temperatures, placed under vacuum, and the ice is then turned directly into vapor without passing through a liquid phase. 

The water escapes as vapor, leaving the dish perfectly intact.
This delicate process preserves over 95% of the nutritional value, while maintaining the original taste, texture, and structure of the food. The result is a very lightweight meal, shelf-stable for years, with no additives or preservatives.

And when rehydrated with the right amount of water, it comes back to life just like a freshly cooked dish.
Most importantly, freeze-drying doesn’t make a dish taste good, it simply locks it in as it is. So if the recipe is delicious to begin with, it will be just as tasty after rehydration. That’s why at SLY, we start by cooking real, great food. The rest is just science… in service of flavour.
